AUSTRALIAN SWEET POTATO

(Ipomoea Batatas)

The sweet potato is a Dicotyledonous plant that belongs to the bindweed or morning glory family, Convolvulaceae. Its large, starchy, sweet-tasting, root vegetable. The young leaves and shoots are sometimes eaten as greens.

They come in a variety of colours the commonly known orange-flesh, purple and white sweet potatoes which may be one of nature's unsurpassed sources of beta-carotene. Several recent studies have shown that sweet potato has the superior ability to raise vitamin A in our blood. Sweet potato is not only yellow/orange it comes in a beautiful sweet purple colour as well, the skin is also white in colour with purple specks and a purple skin which has white flesh. Which scientists have identified the genes that are responsible for the colour change? They are (IbMYB1 and IbMYB2) that produce the purple Anthocyanin Pigments known for their antioxidant properties.

LEMON MYRTLE

Queen of the Citral

Lemon Myrtle (Sweet Verbena) 

Ingredient from a sub tropical plant only found in Australia and has been used for medicinal purposes and flavouring by the Indigenous Australians for hundreds of years.

Rich in antioxidants, anti-bacterial, and anti-inflammatory properties, lemon myrtle has been known to be effective in easing the symptoms of Sinus Problems, Sore Throat and Digestive Issues.

OLD MAN SALTBUSH GROUND

Old Man Saltbush, is native to most parts of Australia.  Indigenous Australians have traditionally utilised the seeds and leaves of Saltbush, used in damper and to flavour foods. Our dried and ground Old Man Saltbush leaf has been wild-harvested in South Australia, grown pesticide-free. It has a soft, salty flavour – slightly earthy – and can be used as a substitute for salt as a seasoning or condiment.

WATTLE SEED

Wattleseed is known to be the unsung hero of the Australian Indigenous Foods. The Acacias are an enormous diverse species which covers the length and breadth of the Australian continent. Not all Acacias are edible but have been a mainstay in the diet of Indigenous Australians for thousands of years. Wattle seeds are very nutritious and taste like chocolate. Wattleseed contains potassium, calcium, iron and zinc in very high concentrations. With a low glycaemic index, they are good for diabetics, providing a steady stream of sugars that do not produce sudden rises in blood glucose levels. Most vitamins are found in wattle seed except for C, B12 and riboflavin. Wattle seed is high in fibre – over 30%

MACADAMIA NUT (BAUPLE)

Seven Species are Native to Eastern Australia. They are high in vitamins and minerals rich in monounsaturated fats low in carbs and sugar and have moderate fibre content and Indigenous to Australia.  

The fruit (nut) is encased in a very hard shell.

Common names for the macadamia nut are:  Macadamia, Macadamia nut, Queensland nut, Bush nut, Maroochi nut, Queen of Nuts and Bauple nut.

MUNTRIE BERRY

Also known as Emu Apple are Native to Southern parts of Australia. A native Super Food filled with very high levels of Antioxidants higher than the levels of the Blueberry. As found in a recent study of Australian native fruits, its capacity is like the Acai Berry to South America. The Muntrie was a major food source for the Indigenous people in this area who ate them fresh as well as dried them for later consumption or trade. (NATIF)

CHILI

Chilli flakes are great for your appetite. Research has suggested that red chilli flakes and other peppers help stimulate metabolism and prevent fat storage. Chili can reduce the damaging effects of LDL (bad cholesterol) and capsaicin may fight inflammation, which has been flagged as a risk factor for heart issues.(Heart Health) Studies show that cultures that eat the spiciest food have much lower incidence of heart attack and stroke.

STRAWBERRIES

"Cupids Food", "Fruit for Lovers" An excellent source of vitamin C and manganese also contains good amounts of folate (vitamin B9) and potassium. Strawberries are very rich in antioxidants and plant compounds, which may have benefits for heart health and blood sugar control. Grown in Bundaberg.

HONEY

Known for its healing powers over many centuries and different cultures. Honey is a natural source of antioxidants, identified as phenolic compounds. Studies show that raw honey has equivalent antioxidants as fruits and vegetables. They have been identified to be protective in nature, preventing cellular damage and improving flow of oxygenated blood towards all the vital organs of the body. (Health Science)

DARK CHOCOLATE

In recent years the popularity of dark chocolate has skyrocketed. Because dark chocolate contains more cacao than any other type of chocolate and has a higher number of flavonoids, powerful antioxidants that have been shown in scientific studies to reduce cardiovascular risk and reduce low-density lipoprotein (LDL) or “bad cholesterol”.  Our chocolate is between 70-75% content (Health Science)

RIBERRY

Riberry is a medium-sized pear shaped 12-15mm a striking red colour that turns pink when cooked it is a coastal rainforest tree native to sub-tropical areas of Queensland and New South Wales.

It has been used by the Indigenous Australians for thousands of years for sweet treats for children but known to the elders as “Medicine Berry” before the Europeans discovered the berries in 1770 by Sir Joseph Banks as a small red fruit it was one of the first berries to be used by the colonists.

COCOA BUTTER

Super food & Antioxidant

Cocoa Butter It is the primary ingredient of chocolate and contains the antioxidant called polyphenols, which is of plant-derived chemicals with a range of potential health benefits.  Other than being beneficial for our skins health it is also good for us as it contains vitamin E and vitamin K, a mixture of monosaturated and saturated fats.

Polyphenols have been found in cocoa powder, not necessarily in cocoa butter.

Cocoa butter is a type of fat that comes from the processing of cocoa beans., and many people use it as a topical treatment for its potential skin benefits.

Sea salt assists in regulating the fluids in our body as well as blood pressure due to the fact that it is not processed as much as the other salts.
